    Prep Ribs
  • Rinse off the ribs then pat dry with paper towel. Flip ribs meat side down and remove the film by using a butter knife to slide under the film to get started. Use a sheet of towel to maintain a grip on the slick film and slowly pull back until all film is removed.
  • Apply BBQ Rub
  • Apply Mustard or Mayonnaise evenly on both sides of ribs by coating the entire surface. Now apply a thin even coat of your favorite BBQ to both sides of the ribs. From hear let the ribs absorb the rub at room temp while we get our grill ready.
  • Cook 2-3 hours
  • Cook your ribs 2-3 hours, spritzing with a combination of 1 part apple juice and 4 parts water uncovered until they begin to get a deep mahogany finish. If you have an instant read thermometer check the temp. We are looking for 165 -170 degrees before we wrap in foil.
  • Foil Wrap and continue Cooking
  • Once we start to get some bark and color on the bbq ribs its time to foil them. Take 2 sheets of heavy duty foil and put two tablespoons of soft butter in the middle of the foil about 6 inches apart. Now take your hot sauce or tiger sauce and put it down top of the butter. Create an area that is the length of the ribs and spread the butter and hot sauce out evenly. Lay the ribs meat side down on top of the hot sauce and butter. Apply hot sauce to the back side of ribs and foil tightly with the 2 sheets of foil. Put the ribs back on the grill meat side down for 1 1/2 to 2 hours. Check them at 1 1/2 hours. We are looking for the meat to start pulling back on the bones about a half an inch. If you pick them up with tongs they should bend nearly completely over with out breaking. Once tender, we need to remove them from the foil and put back on the grill for 30 min to an hour. At this point, we are just trying to tighten them up as they have likely become very moist and tender from the time in the foil. Finally, once you feel that they are done its time to apply your favorite BBQ sauce. After you have a nice coating, let the bbq sauce set. Setting the sauce will take 10- 15. Now it chow time!
