I love chicken wings, but it’s hard to match the deep fried chicken wings at either one of my two favorite wing joints here in Atlanta. Having said that, I decided to set out to create a great wing on my Weber Gas Grill with a Stainless Steel smoker box accessory. You can get em here for $12. I have tried doing this before with mixed results. Today, I nailed it and you can follow my methods below to create your own Amazing Backyard BBQ Wings.

  • First, we are going create a brine to tenderize and add some great flavor to our wings. My grandmother made some major league fried chicken that she fried up in a giant Cast Iron skillet. She always tenderized the chicken my marinating overnite in buttermilk, a touch of tobasco and a mixture of spices. So, let’s combine and mix up all of the Chicken Wing Brine ingredients. Next separate the wings into two equal portions and place each in their own large Ziploc bag. Now pour in an equal amount of brine into each bag. Get as much air out the bags as possible and seal them up. Massage the bags to make sure all the wings get a good coating and put in the fridge overnite. Do not short cut this, you will get the best results if let them marinate overnite. After they are done soaking up all that flavor and tenderizing our chicken wings we need to get as much moisture off the wings as possible. Place them on a baking pan with a cooling rack so they drain. Next, use some paper towel and pat them to absorb and excess moisture. Now it’s time to season our wings.
  • First, use a whisk to mix up all of out Chicken Wing ingredients or put all of the ingredients in a small zip lock and shake it up. Now that we have our rub mixed up, apply a medium coating to all of our chicken wings flip them over and hit the other side.
  • We are going to cook these at 275 – 300 degrees over indirect heat. You can cook these on any type of grill or smoker but you need to cook over indirect heat. Cook on the first side for 30 -45 minutes and when you have some nice deep color go ahead and flip them over and repeat on the other side. Chicken is done at 165 but I’ve found that you will get a better more tender wing if you take the temp up the 175F. Use an instant read to test several wings and roughly average out any difference.
  • On Grill after about 15-20 minutes
  • Once the wings are crispy and up to temp its time to pull em off. Tent them under foil for 10 minutes so the juices can re-distribute and you will have a more tender wing. Enjoy! Share your comments and feedback and own ideas in the comments below.
